Presbytery of Giddings-Lovejoy


Breakfast buffet

 Last week, St. Mark Presbyterian hosted the Presbytery of Giddings- Lovejoy which is like a district meeting of elders, pastors and delegates from the Bi-State region in St. Louis. This is an opportunity for Presbyterians to network, learn about the Old Testament, the pension fund, sell crafts from various missions, have lunch, attend to business and greet friends from other churches.

We host the gathering about once a year because we have a facility which lends itself to the small groups and large gatherings.  But, we also have a membership which can host with just a few weeks' notice.





 Not having much warning, we didn't get many photos of the buffet table or soup table---we were all too busy shuttling food out.  But our menu included sandwiches, soup, potato salad and slaw with cookies for dessert.  We had three soups:  Bean Soup, Chicken and Wild Rice and Gluten Free-Vegetarian Minestrone.  See below for the Chicken and Wild Rice Recipe
Chicken and Wild Rice

1 chicken breast
6 oz. box Uncle Ben's Long Grain with Wild Rice
2 cans reduced fat Campbell's Cream of Chicken Soup
1 celery stick, diced
1 small onion, diced
1 small carrot, diced
1/8 tsp. Mrs. Dash
Chicken broth as needed.

Cook chicken in about 1/4 c. water with celery, onion, carrot, and Mrs. Dash.  After the chicken is cooked, cube or shred it.  Cook the rice following the directions on the box.  Prepare the cans of soup using milk as directed.  Mix all of the ingredients together, adding enough broth for a nice soup.

This soup is a favorite served at Care Giving Luncheons and Midweek Dinners.
