Despite an area-wide power outage on Tuesday, we had a delicious Mexican Bean Soup served by these ladies who "made a little lemonade" with the outage (gas stoves helped!)
Melissa's Mexican Bean Soup
1 lb each red, black and kidney beans undrained
2 cups shoepeg corn (drained well)
1 smoked beef sausage link (cooked and sliced)
3 cups plain Rotel tomatoes
1 small onion diced
1 pkg. taco seasoning
1 pkg. Hidden Vallen Ranch Dressing
Mix well. Add water as needed. Heat to boiling while stirring constantly. Reduce heat and simmer (40 min.)
