Apple Cake with Caramel Sauce

Served at St. Mark Presbyterian Midweek Meal Sept. 30
Apple Cake (from Wild Plum Restaurant)

2 cups granulated sugar
2 eggs
1 cup oil
2 1/2 cups self-rising flour
3 cups peeled and diced tart apples
1 cup walnuts
3/4 tsp cinnamon

Mix all ingredients well.  Pour into greased 9 X 13 pan.  Bake at 350 for 50-60 minutes.  While cake is hot, poke holes in cake and pour caramel sauce on top.

Caramel Sauce

1/2 tsp salt
1/2 cup butter
1 cup light brown sugar
1 tsp vanilla
1/2 cup evaporated milk

Bring first three ingredients to a boil.  Remove from heat.  Whisk in last two ingredients.  Pour over cake.
